Du Jianing of China won the 2019 World Brewers Cup in Boston with a Ninety Plus Gesha Estate on the Origami dripper — its Kalita-inspired flat bed and thin, wide-opening paper letting water pass quickly for clarity. Over 16g of coffee and 240g at 94°C (1:15), her edge was preparation: she double-grinds (a coarse pass with chaff removed, then a finer grind) for more even particle sizes, and oscillates pour rate from 6 to 4 to 5 g/s. The result is a cup she calls 'round and elegant like a cello concert' — floral, apricot and white grape.
