The Chemex, invented in 1941 by chemist Peter Schlumbohm, is a one-piece hourglass carafe that brews and serves in the same vessel. Its signature bonded filters are 20–30% thicker than standard papers, producing the cleanest, most tea-like cup in pour over.
The thick filter slows the draw-down and strips out fines and oils, so Chemex cups are defined by clarity, sweetness and a light, juicy body. Grind slightly coarser than V60 to compensate for the slower filter, and brew bigger batches — the format rewards 30 g and up. For bright washed coffees served to company straight from the carafe, nothing else looks or pours like it.
