One Brewer, Two Extraction Modes
The Hario Switch is a V60 cone with a ball valve at the bottom, and that single part changes what a pour over recipe can do. Close the valve and the coffee steeps like a full immersion brew; open it and the water percolates through the bed exactly like a normal V60. Every good Switch recipe is really a decision about when you flip it.
That decision is worth taking seriously, because valve timing moves the cup further than most grind tweaks do. This guide walks through the four valve patterns that show up again and again in Hario Switch recipes, each one anchored to a recipe you can brew tonight.
What the Valve Actually Changes
With the valve closed, every gram of coffee sits in water for the same amount of time. Contact time is set by your clock, not by the flow rate of the bed, so grind size, fines, and pour accuracy matter far less than they do on an open cone. That is why immersion brewing has a reputation for forgiveness, and it is the same reason a closed Switch tastes rounder and heavier in the body.
With the valve open, water moves past the grounds and drains away, continuously replacing saturated water with fresh water. That gradient is what makes percolation taste bright, clean, and separated. It is also what makes it fragile: channeling, a stalled bed, or a sloppy pour all show up in the glass.
A useful way to think about it: closed builds body and sweetness, open builds clarity and aroma. Valve timing is how you set the mix.
Because the Switch keeps the V60's conical geometry and spiral ribs, the drawdown once you open the valve is fast. Recipes typically compensate with a slightly coarser grind than a straight V60 recipe would use, since the immersion phase already does much of the extraction work.
Pattern 1: Steep, Then Drain
This is the default hybrid, and the best place to start. The valve stays closed for a bloom and one or two main pours, the coffee steeps as a batch, then you open the valve near the end and let everything drain.
Hario's own Switch Hybrid recipe is exactly this shape: 18 g of coffee to 270 g of water, a 1:15 ratio, water at 93°C, a medium grind, and a total brew time of about three minutes. It is rated for beginners for a good reason — with the valve shut for most of the brew, your pouring technique barely influences the result.
Tetsu Kasuya uses the same skeleton at a stronger concentration in his Switch hybrid method: 20 g to 280 g for a 1:14 ratio, 93°C water, a medium-fine grind, and roughly 3:05 on the clock. The tighter ratio and finer grind push toward a fuller, more syrupy cup, which is why it is rated advanced — at 1:14 there is less room to absorb an over-extracted steep.
Where to start: brew the 1:15 version first. If the cup is thin, move toward 1:14 before you touch the grinder.
Pattern 2: Open, Close, Open
The competition pattern begins with the valve open. You bloom and pour into a draining bed, close the valve to trap the rest of the water for a steep, then open it again to finish. You get percolation flavor at both ends of the brew and immersion sweetness in the middle.
The clearest published example is Weihong Zhang's MUGEN Switch competition recipe, which took the 2024 US Brewers Cup title. It runs 15 g to 200 g — a 1:13.3 ratio — with a medium-coarse grind and three minutes total. The valve script is precise: open, pour 50 g at 80°C; close at 0:40 and pour up to 200 g at 92°C; open again at 2:10. The cooler opening water builds sweetness and body without stripping the coffee, while the hotter percolation phase lifts clarity and aroma.
Charity Cheung, champion of the 2022 and 2024 French Brewers Cup, keeps the idea but simplifies the choreography in her MUGEN x Switch recipe: 14 g to 190 g at 1:13.6, 93°C, medium grind, two pours with valve manipulation during the drawdown, and about three minutes total.
Pattern 3: Dual Temperature Staging
Once you are comfortable toggling the valve, the next variable is water temperature. Because immersion and percolation phases are physically separated, you can pour them at different temperatures and target different compounds.
Kunie Inaba's MUGEN x Switch recipe, from the 2024 Canadian Brewers Cup, is built on this: 13 g to 200 g at a 1:15.4 ratio, four valve stages, and two kettles at 92°C and 75°C, finishing in about 2:30. The low dose and open ratio keep the cup light, and the cooler water is used to add extraction time without adding harshness.
If you own only one kettle, you can approximate this by letting the kettle cool between stages, or by adding a splash of room-temperature water to the second pour. Measure the result rather than guessing — a cheap probe thermometer pays for itself here.
Pattern 4: Iced, With the Valve Closed
Flash brewing suits the Switch particularly well, because you can hold hot concentrate above the ice and release it all at once.
Kurasu's V60 Switch iced recipe is a clean template: 15 g of coffee to 140 g of water — a very tight 1:9.3 — with 95°C water, a medium grind, two pours with the valve closed, and about two minutes of brew time, then 150 g of ice added to the server. The concentrate is strong on purpose; the ice is doing the rest of the dilution work.
Grind, Ratio, and Time: A Starting Grid
Across these recipes a pattern emerges that is worth memorizing:
- Ratio: hot Switch recipes cluster between 1:13 and 1:15.5. Competition recipes skew tighter (1:13.3, 1:13.6) with small doses; everyday recipes sit at 1:14 to 1:15.
- Dose: 13 to 20 g. The Switch is not a batch brewer, and small doses steep more evenly.
- Temperature: 92 to 95°C for a single-temperature brew.
- Grind: medium to medium-coarse for open-close-open patterns, medium-fine only when the ratio is tight and the steep is short.
- Total time: roughly 2:30 to 3:40, including drawdown.
Weihong Zhang's everyday Switch recipe is a good sanity check on those numbers: 16 g to 240 g at 1:15, 92°C, medium-coarse, two pours, and about 3:40 total. That is what a champion brews when nobody is scoring the cup.
Troubleshooting
The cup is muddy or heavy. Your steep is too long or your grind too fine for the contact time. Open the valve earlier, or move one step coarser and keep the timings.
The cup is thin and sour. Extraction stopped early. Extend the closed phase by 20 to 30 seconds before changing anything else, or tighten the ratio toward 1:14.
Drawdown stalls after you open the valve. Fines have compacted the bed. Grind coarser, and avoid pouring aggressively onto the center of the bed while the valve is closed — the point of immersion is that you do not need agitation.
Results vary day to day. Time the moment you flip the valve, not just the total brew. On the Switch, the flip is the recipe.
