The Clever Dripper makes immersion brewing simple, but its recipes are not all the same: dose, ratio, water temperature, order of addition, steep time, and drawdown can each move the result. This guide compares four real methods so you can choose a useful starting point instead of combining instructions from unrelated recipes. Once you choose one, a small, controlled adjustment is usually more informative than rebuilding the whole brew.
The Four Clever Dripper Recipes at a Glance
All four methods use the same basic Clever workflow: brew with the valve closed, then place the brewer on a cup to release the coffee through its paper filter. Their numbers, however, define four distinct starting points.
- Workshop Coffee Clever Dripper: 19g coffee and 300g water, a 1:16 ratio, 100°C water, and a medium-fine grind. It uses a water-first start, steeps for 115 seconds, and allows about 60 seconds for drawdown. The API step durations add up to 205 seconds, while the dataset separately lists 255 seconds as the total; do not derive either figure from the other.
- James Hoffmann Clever Dripper: 18g coffee and 300g water, a 1:16.7 ratio, 90°C water, and a medium-fine grind. This is also water-first, with a 120-second steep, a crust break followed by a 22-second settling wait, and about 60 seconds of drawdown; its listed total is 222 seconds.
- Center Coffee Clever Hot: 15g coffee and 246g water at 1:16.4 with a medium grind. The full water amount is poured with the valve closed. Its instruction says to steep for 2:30, while its separately listed total is 2:55.
- Morgan Eckroth Clever: 20g coffee and 300g water at 1:15, using 95°C water and a medium-coarse grind. Pour all the water, stir three or four times, steep for 2:30, then allow a 50-second drawdown, for a listed total of 240 seconds.
The ratios span from 1:15 to 1:16.7, while the specified temperatures span from 90°C to 100°C. That range is useful because it shows there is no single mandatory Clever setting. It does not mean every variable can be mixed freely: each recipe is a complete system, so begin by following one system intact.
Choose by Workflow Before Chasing Flavor
The easiest first decision is whether you want a water-first routine. Workshop and Hoffmann both put the water into the empty brewer before adding the grounds. That order helps the dry coffee meet an already formed body of water rather than sitting against the filter during the pour. It also changes the physical routine: weigh the water accurately first, add the coffee promptly, then stir until no dry pockets remain.
Choose Workshop when you want the hotter of the two water-first references and can work comfortably with a 100°C target. Choose Hoffmann when 18g to 300g fits your serving size and you want the most explicitly staged finish: 120 seconds of steeping, a crust break, 22 seconds for the grounds to settle, and then release. The wait after stirring is part of that method, not spare time to omit casually.
Center Coffee is the smallest brew here. Its 15g dose and 246g water can suit someone who wants less finished coffee without recalculating a larger recipe. The method is also compact: make a full pour, steep, and finish at the listed 2:55 total. Because its recipe specifies a medium grind but no water temperature in the comparison data, choose your temperature based on the coffee and keep it recorded; do not invent an “official” number for the missing field.
Morgan Eckroth is the strongest ratio of the four at 1:15 and uses the coarsest stated grind, medium-coarse. It is a clear option when you prefer a 20g dose, a full pour, and an easy-to-count three or four stirs before a 2:30 steep. Treat Ratio, Grind, and Time as Separate Controls
Ratio changes concentration first. Morgan uses 20g of coffee for the same 300g of water used by Workshop and Hoffmann, so it starts stronger on paper at 1:15. Hoffmann uses the least coffee for that 300g volume at 1:16.7. If the strength in your cup is wrong but the extraction tastes balanced, ratio is the clearest adjustment: use slightly more coffee for a stronger drink or slightly more water for a lighter one, while keeping the rest of the method stable.
Grind changes how readily the coffee extracts and how easily liquid passes through the bed during release. Workshop and Hoffmann specify medium-fine, Center specifies medium, and Morgan specifies medium-coarse. Those labels are relative because grinders do not share a universal setting. Use the words to establish the order on your own grinder, then use drawdown behavior and taste to refine the setting.
Time has two parts in a Clever recipe. Steep time is the controlled immersion period; drawdown is the drainage period after the valve opens. A 2:30 steep does not mean a 2:30 total brew. Morgan adds a 50-second drawdown after its 2:30 steep, and Workshop allows about 60 seconds after a 115-second steep. Record both numbers. If you only write down the finish time, you lose the clue that separates a long immersion from a slow, potentially restricted drain.
Temperature should stay attached to its source recipe during the first test. The three stated values here are 90°C for Hoffmann, 95°C for Morgan, and 100°C for Workshop. Center's supplied method does not state one, so treat that as an open choice rather than filling the gap with another author's setting.
A Repeatable Dial-In Routine
Start with fresh water, rinse the paper, and confirm that the Clever valve remains closed before brewing. Pick the recipe whose dose and workflow fit your morning, then reproduce its coffee amount, water amount, grind category, temperature when specified, order of addition, agitation, and timing. The purpose of the first cup is to establish a baseline, not to prove that the recipe is universally perfect.
Taste after the cup has cooled enough to reveal its structure. If it is pleasantly balanced but too concentrated, change the ratio rather than immediately changing grind and time. If it tastes sharp or underdeveloped while the strength is acceptable, move the grind slightly finer on the next brew. If it is drying or harsh, move slightly coarser. These are diagnostic starting moves, not guarantees; water composition, roast, grinder, and coffee age can all affect the result.
Watch the release as well. Compare your drawdown with the method you selected: roughly 60 seconds for Workshop and Hoffmann, and 50 seconds for Morgan. Center's instruction gives a 2:30 steep and separately lists a 2:55 total, so use its linked timer rather than deriving a drainage target by subtraction. A single outlying brew may come from filter placement or agitation, so repeat it before making a large grind change. When the drain repeatedly runs much longer than the reference, a small coarser adjustment is easier to evaluate than cutting the steep at the same time.
Keep a short note with coffee dose, water, temperature, grinder setting, steep, drawdown, and one sentence about taste. Change one variable for the next cup. Two brews with one deliberate difference teach you more than two completely different Clever recipes made back to back.
Common Mixing Errors to Avoid
Do not take Morgan's 1:15 ratio, Workshop's medium-fine grind, Hoffmann's 90°C water, and Center's finish time and assume you have assembled a better recipe. The four methods balance their variables differently. Mixing them before establishing a baseline makes it difficult to know which choice caused the change in the cup.
Do not confuse “water-first” with a full-pour recipe. Water-first describes whether water or grounds enter the brewer first. A full pour describes adding the recipe's water in one pour rather than several pulses. Workshop and Hoffmann are explicitly water-first; Center and Morgan specify a full pour. Follow the linked timer for the exact sequence instead of relying on the labels alone.
Finally, do not force the clock by lifting, shaking, or repeatedly stirring during drawdown unless the chosen method asks for it. Drawdown is useful feedback. Letting it proceed normally preserves the evidence you need for the next grind adjustment.
