Coffee bloom is the opening wetting and waiting step in many pour-over recipes. The useful question is not whether one universal bloom rule exists, but how much water and time your chosen recipe assigns before the next pour. Three published V60 methods make that choice concrete: each waits 45 seconds, while using 50ml, 60ml, or 66ml for a different coffee dose.
What “bloom” means on a recipe card
On a practical recipe card, the bloom begins when the first water reaches the dry grounds and ends when the next scheduled pour begins. It is a distinct stage because the brewer is asked to wet the bed, pause, and then continue. You do not need to invent a separate target once a complete recipe already gives you the first-pour amount and its time.
That definition also prevents a common reading error. A line such as “60ml for 45 seconds” contains two instructions: stop adding bloom water at 60ml, then let the opening stage occupy 45 seconds. It does not mean pour continuously for the whole interval. Likewise, a later target can be an additional amount or a cumulative scale reading. Read the wording on the complete recipe before you start, and keep the timer and scale visible.
The three anchor recipes here all use a V60, yet they do not use one fixed bloom volume. James Hoffmann V60 pairs 30g coffee with 500g water at a listed 1:16.6 ratio. Tetsu Kasuya 4:6 Method uses 20g and 300g at 1:15. Scott Rao V60 uses 22g and 352g at 1:16. Their opening stages only make sense beside those full doses.

The table shows why “use two to three times the coffee weight” is a range, not a complete recipe. Hoffmann’s 60ml is exactly twice a 30g dose. Rao’s 66ml is exactly three times 22g. Kasuya’s 50ml is two and a half times 20g. All three opening stages last 45 seconds, but each belongs to a different schedule.
The units in these recipe steps are millilitres for water and grams for coffee. In practice, follow the unit displayed by the recipe and your scale rather than converting the published targets into a new set of numbers. The comparison is useful because it reveals the intended relationship; the recipe itself remains the authority for the pour.
Hoffmann: 60ml, 45 seconds, then a swirl
The Hoffmann card starts with 30g of coffee and 500g of total water. Its first step calls for 60ml over the grounds, a 45-second bloom, and a swirl. The bloom volume is therefore about 2x the coffee dose. The swirl belongs to this named method; it should not silently be added to every other recipe just because it appears here.
To execute it cleanly, tare the scale, start the timer with the first water, and stop the opening pour when the display reaches 60ml. Perform the listed swirl without turning it into a new measured target, then wait for the schedule to reach 45 seconds. At that point, move to the next step in the full card. The dataset gives the complete brew as 30g/500g and 1:16.6, so the opening 60ml is only part of the total water, not a miniature standalone ratio.
This is also a good example of why dose and bloom cannot be separated. Copying 60ml onto a 20g recipe would change the opening relationship from 2x to 3x. That may match another published method, but it would no longer be the Hoffmann schedule as recorded.
Kasuya: 50ml at 0:00, then 70ml at 0:45
The Kasuya card starts with 20g of coffee and 300g of total water at 1:15. Its first step begins at 0:00 with 50ml and holds until 0:45. The next step starts at 0:45 and adds 70ml, bringing the cumulative scale reading to 120ml. Those two values answer an important practical question: 70ml is the second addition, while 120ml is the total displayed after it.
For the bloom alone, stop at 50ml. Do not pour to 120ml during the opening 45 seconds, because that total belongs after the second addition. The 50ml first pour is 2.5x the 20g coffee dose. It sits between the two other examples without needing to be rounded into either a 2x or 3x rule.
Kasuya’s schedule makes timing especially easy to read because the next pour is explicitly attached to 0:45. Start the timer at first contact, reach the first target, and wait for that timestamp. When the timer reaches it, add the specified 70ml and watch the scale advance from 50ml to 120ml. Keeping “addition” and “cumulative total” separate will do more for repeatability than memorising a slogan about bloom water.
Rao: 66ml for 45 seconds, followed by a brief stir
The Rao card uses 22g coffee and 352g water at a listed 1:16 ratio. Its first stage is 66ml for 45 seconds, which is exactly 3x the coffee dose. After that opening stage, the recorded method calls for a spoon stir lasting 5 seconds. The stir is a following action in this schedule, so preserve its position instead of moving it into the bloom without evidence.
Set up the same way: tare, start the timer with the first water, and stop at 66ml. Wait until the 45-second opening stage is complete, then follow the card’s next instruction and stir for 5 seconds. The numbers are precise enough that there is no reason to replace them with “roughly some water” or to copy Hoffmann’s swirl. Rao’s method gives you its own amount, interval, and subsequent movement.
The total 352g is another guardrail. A 66ml bloom leaves the majority of the recipe water for the later schedule. If you change the dose or total water, you are scaling or redesigning the method; write down that change rather than presenting it as the original card.
How to choose and repeat a bloom
Choose the complete recipe first, then use its bloom. Pick Hoffmann when you want to execute the recorded 30g/500g method, Kasuya for the 20g/300g 4:6 schedule, or Rao for the 22g/352g method. The choice should include the later pours as well as the opening step. Mixing one method’s bloom with another method’s remaining schedule creates a new routine that the source cards do not document.
Before heating water, write down four items: coffee dose, bloom target, next-pour timestamp, and any named movement. For these examples, that shorthand is “30g / 60ml / 0:45 / swirl,” “20g / 50ml / 0:45 / none listed in the first step,” or “22g / 66ml / 0:45 / stir next for 5 seconds.” This compact note keeps the opening action clear while the full recipe remains open for everything that follows.
If a brew is difficult to repeat, check your record before inventing a cause. Did the timer start with first water? Did you stop at the bloom target? Did you confuse the next addition with a cumulative target? Did you perform only the movement the chosen method names? These are observable checks. Change one item on the next attempt and label the change, rather than claiming that an unmeasured mechanism explains the cup.
