Emi Fukahori won the 2018 World Brewers Cup with a hybrid immersion-and-drip approach on the GINA brewer. Over 17g of coffee and 220g of 100 ppm water, the GINA's valve lets her blend full immersion with percolation — ideal for the delicate, syrupy Laurina (an anaerobic Bourbon Pointu from Daterra, Brazil) that barely responds to grind or stirring but shifts with temperature. Trained alongside 2016 champion Tetsu Kasuya, she built a recipe that lets the coffee's citric-to-malic acidities unfold as the cup cools.
