Making pour over for two starts with choosing a batch you can repeat and then checking how it fills your cups. These three recipes offer two starting sizes: 500g of brewing water with Detour V60 or The Barn Chemex, and 750g with Counter Culture Chemex. Choose the recipe that matches your brewer and intended serving, then keep its dose and pouring schedule together.
Decide what two cups means at your table
A recipe's water amount describes the water used for brewing; it does not establish the finished amount in each cup. Dividing 500g by two gives 250g of input water per person, but it is not a measured beverage yield. The same distinction applies to a 750g batch: the arithmetic alone cannot tell you where the coffee will reach in your mugs.
For the first brew, use your usual cups and note the amount actually served. If the portions suit you, that recipe becomes a useful household baseline. If they do not, choose another batch size deliberately rather than treating the words “two cups” as a fixed measurement. None of these recipe records provides a measured final beverage yield that would justify promising an exact fill level.
Choose a complete batch recipe
All three recipes list a medium-coarse grind, but their doses, temperatures, and schedules differ. That shared grind description is a starting category, not a transferable grinder setting.

These are the quantities recorded in Detour V60, The Barn Chemex, and Counter Culture Chemex. Ratio labels are rounded descriptions: 500 divided by 31 is approximately 16.13, while 750 divided by 45 is approximately 16.67. When reproducing either recipe, weigh its stated dose and water instead of recalculating the batch from the shorter ratio label.
Detour V60: a 500g batch with three water additions
Detour pairs 30g of coffee with 500g of water. Its opening instruction calls for 100g of boiling water over 20 seconds to saturate the grounds. The next step asks you to stir with a spoon or paddle, then wait 20 seconds. Keep that stirring step in your plan; it belongs to this particular recipe.
Next, add 200g and allow a 20-second drain. Finish with the remaining 200g, poured in circles, with drainage completing around 3:00. The water additions are therefore 100g, 200g, and 200g. On a scale left running throughout the brew, the corresponding cumulative targets are 100g, 300g, and 500g.
That distinction is worth settling before the kettle is in your hand. “Add 200g” means an additional amount here, whereas “pour to 300g” would describe the scale total. Open the recipe before brewing and keep the full sequence visible. Detour's temperature field has no numeric setting; its instruction is boiling water, so there is no separate temperature number to copy.
The Barn Chemex: another route to 500g
The Barn uses 31g of coffee and 500g of water at 95°C. Rinse the paper filter and discard that water first. The brewing sequence begins with a vigorous 62g pour to cover the grounds, followed by a 30-second bloom.
The next instructions add 100g in circles at 0:30, another 100g at 1:00, and another 100g at 1:30. After those additions, the cumulative brewing water is 362g. Continue with the remaining 138g to reach 500g, then allow drainage to finish around 3:00.
This gives you a different set of checkpoints from Detour despite the same total water. For two people sharing a 500g-input batch, the practical choice is whether you are following the V60 method or the Chemex method. Keep the selected recipe's opening pour, agitation instructions, and later additions together rather than borrowing whichever individual numbers look easiest.
Counter Culture Chemex: step up to 750g
Counter Culture's Chemex recipe supplies a larger starting batch with 45g of coffee and 750g of water at 93°C. Rinse the filter and discard the rinse water. Start brewing with 100g at 0:00 to wet the grounds, then pour in circles to a cumulative 200g at 0:30 and 300g at 1:00.
Continue circular pours every 30 seconds until the total reaches 750g. The remaining water after the 300g checkpoint is 450g, but the later instruction does not specify a separate weight for every pulse. Follow that published rhythm without inventing a more detailed schedule.
The final step gives a total drainage window of 4:00–5:00; the recipe summary records 4:30. Those references belong to this 750g method. They do not establish a rule that every larger batch needs the same extra brewing time, and they should not replace The Barn's timing simply because both recipes use a Chemex.
Scale quantities without inventing grind or time corrections
Increasing a 500g batch to 750g is a quantity multiplier of 1.5. Applying that arithmetic to Detour's 30g dose gives 45g, which happens to match Counter Culture's dose. It does not turn Detour's V60 instructions into Counter Culture's Chemex method: their starting pours, agitation, and time references remain different.
The three records also do not provide a grinder-specific conversion for larger batches. Begin with the selected recipe's medium-coarse description and record your actual setting, pour checkpoints, finish time, and impression of the cup. If you try an adjustment, change one variable at a time so your notes remain interpretable. Treat a time difference as something to investigate alongside your pouring record and taste, rather than sufficient evidence for a fixed grind correction.
