James McCarthy of Counter Culture Coffee took the 2013 World Brewers Cup with a Kalita Wave and a clever kettle trick. Over 24g of coarse, sifted coffee (1:15.8, 380g just off boil), he used a high-flow kettle for the first half, then switched to flow-restricted kettles that hold a standing column of water above the bed. That column absorbs agitation, so the brew pulls out the sweetness of the coffee instead of the bitterness of over-extraction. A 45-second bloom leads into a steady 3:30 total brew.
